I try to be pretty positive on this blog. I think it helps in motivating people. I mean, sometimes exercising hurts and eating healthfully is hard, so a little bit of cheerleader mixed with some sarcastic humor is, I feel, a good thing. Today, though….
You’ll remember when I waxed philosophic about my new found albeit tardy love for sweet potato toast? Well, emboldened by my success, I decided to revamp my usual overnight oats as zoats. Zucchini oats. I love zucchini and I eat tons of it during the spring and summer, so I thought, this should be okay.
Could not have been more wrong if I tried. I attempted several different recipes and I couldn’t actually finish a single one of them. I tried hot zoats, cold zoats, zoats with applesauce and other sweet things, zoats with just cinnamon. Yeech. Just sitting here writing this has me half gagging again. I have to conclude that something about the texture just did not strike my palate’s fancy. I have chalked this one up to you win some you lose some in the healthful eating game.
That said, if you have tried zoats and like them, you do you friend. I will be sticking to my usual pumpkin pie (yes I eat pumpkin year round) or PBJ overnight oats. (If you are interested in either of those “recipes” leave me a comment.) I prefer to start my day on a positive note, and that includes not gagging on my breakfast.
